2 tablespoons olive oil
1 yellow onion , chopped
2 stalks celery , chopped
2 carrots , chopped
2 containers vegetable stock
1 smoked ham bone
2 cans white beans , rinsed and drained
1/2 bunch parsley , chopped

Instructions

1.In a pot over medium heat, warm the olive oil and sauté the onion, celery, and carrots for 7-8 minutes, until softened.
2.Add the vegetable stock and smoked ham bone to the pot and bring to a boil. Reduce heat and simmer, covered, for 45 minutes.
3.Remove the ham bone from the pot and let it cool slightly. Remove the meat from the bone and chop it into small pieces, then return the meat to the pot.
4.Add the white beans and parsley to the pot and bring to a simmer. Cook for an additional 10 minutes, then remove from heat and let cool slightly.
5.Purée half of the soup in a blender or food processor, then return it to the pot and stir well. Season with salt and pepper to taste.
