Ingredients

6 pounds pork spareribs
Dry rub :
1/2 cup packed brown sugar
2 tablespoons chili powder
1 tablespoon paprika
1 tablespoon freshly ground black pepper
2 tablespoons garlic powder
2 teaspoons onion powder
2 teaspoons kosher salt
2 teaspoons ground cumin
1 teaspoon ground cinnamon
1 teaspoon jalapeno seasoning salt ( optional )
1 teaspoon cayenne pepper
Mop Sauce :
1 cup apple cider
3/4 cup apple cider vinegar
1 tablespoon onion powder
1 tablespoon garlic powder
2 tablespoons lemon juice
1 jalapeno pepper , finely chopped ( optional )
3 tablespoons hot pepper sauce
kosher salt and ground black pepper to taste
2 cups wood chips , or as needed
Smoked pork spare ribs are a classic American barbecue dish, but this recipe takes it to a whole new level. The dry rub and mop sauce give the ribs a complex and satisfying flavor that will have everyone coming back for seconds. Smoking the meat low and slow allows it to tenderize and absorb the flavors of the dry rub and mop sauce, while still retaining its moisture.

Instructions

1.Preheat smoker to 225 degrees F (110 degrees C).
2.Rinse ribs under cold water and pat dry with paper towels.
3.Mix together all the ingredients for the dry rub in a bowl.
4.Rub the spareribs all over with the dry rub, making sure to coat both sides. Let stand for 15 minutes.
5.Place the ribs fat side up in the smoker and smoke for 3 hours.
6.Meanwhile, whisk together the ingredients for the mop sauce in a bowl.
7.After 3 hours, brush the mop sauce over the ribs and continue to smoke for another hour.
8.Brush more mop sauce over the ribs every 30 minutes until done, approximately 6 hours total or until an instant-read thermometer inserted into the thickest part of the meat registers 160 degrees F (70 degrees C).
9.Remove the ribs from the smoker and let rest for 10 minutes before serving.
