1/2 package saltine crackers , crushed
1/2 cup dry potato flakes
1/2 cup all-purpose flour
4 thick pork chops
salt and pepper to taste
1 1/2 cups vegetable oil for frying

Instructions

1.Preheat the oven to 200°F.
2.In a shallow bowl, mix together flour, paprika, garlic powder, salt and pepper.
3.In another shallow bowl, whisk together eggs and milk.
4.In a third shallow bowl, mix together crushed saltine crackers and dry potato flakes.
5.Dredge each pork chop in the flour mixture, shaking off excess, then dip in the egg mixture and then coat heavily in the cracker/potato flake mixture.
6.In a heavy-bottomed frying pan, heat vegetable oil to 350°F.
7.Fry pork chops for about 5-6 minutes per side over medium heat until golden brown, then transfer to a paper towel-lined baking sheet.
8.Place the baking sheet in the oven to keep warm for up to 20 minutes while cooking the remaining pork chops.
9.Serve hot and enjoy with your favorite side dishes!
