Collard greens are a leafy, green vegetable that belong to the Brassica family, which is closely related to the cabbage and broccoli plants. This versatile vegetable has been a Southern US specialty for generations and is often enjoyed as a side dish or in stews and soups. Billy's Favorite Smoky Collard Greens recipe elevates this leafy green by adding smoky and sweet flavoring that compliments the slightly bitter taste of the collard greens. This is a side dish that tastes delicious with almost any meat or poultry.

Instructions

1.Heat the olive oil in a large pot over medium heat.
2.Add the onion and garlic, sautéing until the onion is translucent, for about 5 minutes.
3.Increase the heat to medium-high and add the chopped collard greens to the pot.
4.Turn the leaves in the pot until they have been coated with oil and onions, allowing them to cook for 5-8 minutes until the collard greens are tender and wilted.
5.Mix in the brown sugar, molasses, and liquid smoke flavoring, stirring until the collard greens are evenly coated.
6.Season with salt and ground black pepper according to your taste, and continue to cook the collard greens for an additional 5-10 minutes, stirring occasionally.
