Ingredients

1 1/2 cups cider vinegar

1 large tart apple - peeled , cored and chopped
1 cup golden raisins
3/4 cup white sugar
1/4 cup lemon juice
1 green chile pepper , chopped
1 tablespoon minced fresh ginger root
1 tablespoon lemon zest
1 teaspoon ground coriander seed
1/8 teaspoon ground cloves
2 1/2 Fuyu persimmons , peeled and chopped

Instructions

1.In a medium-sized pot, combine the cider vinegar, chopped onion, chopped tart apple, golden raisins, white sugar, lemon juice, chopped green chilli pepper, minced ginger root, lemon zest, ground coriander seed, and ground cloves.
2.Bring the mixture to a boil over medium-high heat, stirring frequently.
3.Reduce the heat and let the mixture simmer for about 45 minutes, stirring occasionally.
4.Add the chopped persimmons to the pot and continue to simmer the chutney until the fruit is soft and the mixture has thickened.
5.Remove from heat and cool to room temperature.
6.Serve as a condiment with crackers, cheese, meat, or any other foods as desired.
