Ingredients

3 1/2 pounds ground beef chuck
1 pound ground pork
1/2 cup meat drippings , or as desired
1 cup minced onion
4 cloves garlic , minced
1 cup tomato paste
1 cup water
1/2 cup beef stock
3 tablespoons chili powder
2 tablespoons ground cumin
2 teaspoons dried Mexican oregano
2 teaspoons smoked paprika
1 teaspoon ground coriander seed
1 teaspoon unsweetened cocoa powder
2 tablespoons cornmeal
2 tablespoons all-purpose flour

Instructions

1.In a large pot over high heat, cook ground beef and pork until browned, about 10 minutes.
2.Drain off grease but save a 1/2 cup for later.
3.Add in onions and garlic, and sauté for 5 more minutes.
4.Mix in tomato paste, water, beef stock, chili powder, cumin, oregano, smoked paprika, coriander seed, and cocoa powder. Stir well, and bring to a boil.
5.Reduce heat to low and simmer for 45 minutes, stirring occasionally until thickened to your desired consistency.
6.In a small bowl, whisk together cornmeal and flour. Mix into chili until thickened, and cook for 5 more minutes.
7.Serve hot, topped with your favorite toppings.
