2 beets , peeled and quartered

Instructions

1.Preheat oven to 200 C / Gas 6.
2.In a large ovenproof pot, heat 2 tablespoons olive oil over medium heat. Add chopped onion, cubed potatoes, brown rice, quartered beets, eggs, garlic powder, seasoned salt, 1 cup water, salt and pepper to taste and mix well.
3.Drizzle 1/4 cup olive oil over the top. Add enough water to cover the mixture.
4.Cover the pot and bake in the preheated oven for 1 hour. Reduce oven temperature to 120 C / Gas 1/2 and bake overnight or at least 12 hours.
5.Remove eggs from the mixture. Peel before serving. Serve hot with challah or rice.
