Ingredients

2 pounds beef chuck roast
1 tablespoon vegetable oil
1 pound beef soup bones
6 cups water , or as needed to cover
1 teaspoon vinegar
6 slices bacon , minced
3 cans diced tomatoes , drained
3 cans black beans , rinsed and drained
3 cans kidney beans , rinsed and drained
3 cans cannellini beans , drained and rinsed
4 yellow onions , diced
1 whole head garlic , minced
1 can tomato paste
1 green bell pepper , diced
1 red bell pepper , diced
2 jalapeno peppers , seeded and chopped
2 serrano peppers , seeded and chopped - or more to taste
1/2 cup chili powder , or more to taste
2 tablespoons smoked paprika
2 tablespoons ground cumin
2 1/2 squares dark unsweetened chocolate
1/4 package anchovy paste
1 bay leaf
2 cans or bottles stout beer , or more to taste
1 tablespoon cornstarch ( optional )
Chili is a classic dish that is beloved by many for its hearty and warming properties. This recipe makes a large batch, perfect for feeding a crowd or meal prepping for the week. While it does take some time to prepare, the end result is well worth the effort. Instructions

1.Heat a large dutch oven or pot over medium-high heat.
2.Add the vegetable oil and beef chuck roast, cooking until browned on all sides.
3.Remove the beef from the pot and set it aside.
4.Add the beef soup bones to the same pot, cooking until browned on all sides.
5.Add enough water to cover the bones, then add vinegar and bring to a boil. Once boiling, reduce to a simmer and cook for 1-2 hours.
6.Remove the bones from the pot.
7.Add minced bacon to the pot and cook until crispy, then remove and set aside.
8.Add diced onions and minced garlic to the bacon fat in the pot and cook until softened.
9.Add in the diced tomatoes, tomato paste, beans, bell peppers, jalapeno and serrano peppers, chili powder, smoked paprika, cumin, and bay leaf.
10.Stir well and bring to a boil, then cover and reduce the heat to a low simmer.
11.Simmer for 4-5 hours, stirring occasionally and adding beer to the pot as needed.
12.Add dark unsweetened chocolate and anchovy paste to the pot, then stir.
13.Cook for an additional 1-2 hours, or until the chili is thick and hearty.
14.If desired, mix 1 tablespoon of cornstarch with a small amount of water and stir into the chili to thicken further.
15.Serve hot, garnished with the crispy bacon and fresh chopped cilantro if desired.
