Ingredients

50 g scant 1/3 cup carob chips
1 1/2 cups soymilk
1 teaspoon vinegar
1/3 cup raw agave nectar or 1/3 cup honey
1/3 cup grapeseed oil
1/2 tablespoon ground flax seed
1/2 tablespoon vanilla
1/3 cup carob powder
120 g scant cup oat flour
160 g scant 1 1/2 cups spelt flour
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt
1 1/2 tablespoons cornstarch
3 tablespoons cold water
1 cup soymilk
1/3 cup light corn syrup
3 packets purevia stevia ( or your favourite )
90 g carob powder
1/2 teaspoon agar , powder or 1/2 teaspoon gelatin
Carob Snacking Cake is a vegan, gluten-free, and healthy dessert that is perfect for snack time or afternoon tea. Carob is a legume that has been used as a substitute for chocolate due to its lower fat and caffeine content. This recipe uses carob chips and powder to add a nutty and sweet flavor to the cake. Instructions

1.Preheat oven at 350°F. Grease 8x8-inch pan with oil.
2.In a small bowl, mix soymilk and vinegar. Set aside for 5 minutes.
3.In a large mixing bowl, mix together agave nectar, grapeseed oil, flaxseed, vanilla, and carob powder.
4.Add oat flour, spelt flour, baking soda, baking powder, salt, and cornstarch. Mix well.
5.Add soymilk and vinegar mixture to the bowl and mix until well combined.
6.Pour the batter into the prepared pan and bake for 25-30 minutes.
7.Remove from oven and let it cool for 5 minutes in the pan.
8.Remove from pan and let it cool completely on a wire rack.
9.Meanwhile, in a medium mixing bowl, mix together cold water, soymilk, corn syrup, purevia stevia, carob powder, and agar or gelatin.
10.Pour the mixture into a saucepan and bring it to a boil over medium heat. Stir constantly for 5-10 minutes until it thickens.
11.Pour the mixture over the cooled cake and let it set for at least 1 hour before slicing it into serving pieces.
