Ingredients

2/3 cup dark muscovado sugar
2/3 cup low-fat soymilk
1 tablespoon canola oil
1 teaspoon vanilla
1 pinch stevia powder
1 1/3 cups whole wheat flour
3/4 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon allspice
200 g finely grated radishes ( about 1 1/2 cups )
2/3 cup raisins , soaked in hot water and drained ( I used my favourite kind , flame raisins )

Instructions

1.Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
2.Mix together the dark muscovado sugar, low-fat soymilk, canola oil, vanilla, and stevia powder in a large bowl.
3.In a separate bowl, sift together the whole wheat flour, baking soda, baking powder, cinnamon, and allspice.
4.Fold the dry ingredients into the wet ingredients until just combined.
5.Stir in the grated radishes and raisins.
6.Pour the batter into the muffin cups, filling each cup about 2/3 full.
7.Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
8.Remove the muffins from the tin and let cool on a wire rack.
