Ingredients

4 lbs rhubarb , cut into small pieces
3 1/2 cups sugar
3/4 cup tart cherry juice
2 tablespoons lemon juice
1/2 tablespoon vanilla extract

Instructions

1.In a large pot, combine the rhubarb and sugar, and let it sit for a couple of hours to macerate.
2.Next, add in the cherry juice and lemon juice, and bring the mixture to a boil.
3.Reduce heat and let it simmer until the rhubarb has broken down and the mixture has thickened.
4.Remove pot from heat and stir in the vanilla extract.
5.Using an immersion blender, puree the mixture until smooth.
6.Transfer the rhubarb butter to sterile jars and store in the fridge until ready to use.
