Ingredients

2 cups unsweetened apple juice or 2 cups apple cider
2 inches fresh ginger , left whole
1 pinch allspice
2 large pears , peeled , cored and diced ( I used forelle )

Instructions

1.In a large pot, bring the apple juice or cider, ginger, and allspice to a boil.
2.Add the diced pears and bring to a simmer.

4.Remove the ginger and puree the mixture with an immersion blender or in a food processor until smooth.
5.Return the mixture to the pot and simmer over low heat, stirring occasionally, until the mixture thickens and darkens to a deep amber color, about 1-2 hours. If the mixture starts to stick to the bottom of the pot, reduce the heat and add a splash of water.
6.Once the mixture has thickened, transfer it to a clean jar and allow it to cool before refrigerating.
