Ingredients

2 1/2 cups frozen rhubarb or 2 cups fresh rhubarb , chopped
1/4 cup granulated sugar
2 -3 oranges
2 tablespoons granulated sugar
1 egg
1 teaspoon vanilla
3 cups all-purpose flour
3/4 cup granulated sugar
3 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup butter , melted
3/4 cup pecans or 3/4 cup walnuts , coarsely chopped

Instructions

1.Preheat oven to 350 degrees F.
2.In a medium bowl, toss rhubarb with 1/4 cup sugar and let sit.
3.Grate zest from 1-2 oranges until you get 2 tbsp of zest. Add zest, 2 tbsp sugar, egg, vanilla; mix well.
4.In a separate larger bowl, sift together flour, remaining 3/4 cup sugar, baking powder, baking soda, and salt.
5.Add orange-juice and butter into the medium bowl mixture.
6.Combine it with dry mixture until flour is mixed.
7.Add in chopped nuts and rhubarb.
8.Spoon the loaf batter into greased 9x5 inch loaf pan.
9.Bake for 55-60 minute; test; cool.
