Ingredients

2 1/4 ounces unsalted butter ( or vegan margarine for baking like Earth Balance Buttery Sticks )
2 1/4 ounces organic coconut oil
1/4 teaspoon sea salt
2 tablespoons sucanat or 2 tablespoons dark brown sugar
3 packets vanilla-flavoured stevia ( or 2 more tbsp sugar )
1/2 tablespoon vanilla extract
1 cup whole wheat pastry flour
3 ounces fresh strawberries , roughly chopped
1/4 cup tart cherry juice
1 packet vanilla-flavoured stevia
1 1/2 tablespoons chia seeds ( or white Salba if you prefer )
These Strawberry Tartlettes are the perfect ending to a summer meal. They are filled with juicy, fresh berries and have a delicious, tangy-sweet flavor. Made with whole wheat pastry flour, coconut oil, and chia seeds, they are also a healthier dessert option. Instructions

1.Preheat your oven to 350°F (180°C).
2.In a mixing bowl, cream together the unsalted butter (or vegan margarine), coconut oil, sea salt, sucanat (or dark brown sugar), vanilla-flavoured stevia (or sugar), and vanilla extract until smooth.
3.Add the whole wheat pastry flour to the bowl and mix until you get a smooth, homogeneous dough.
4.Divide the dough into six, and press each portion into a greased tart pan. Prick the surface of the dough with a fork, then set them aside while you prepare the filling.
5.In a small saucepan, heat the fresh strawberries, tart cherry juice, and vanilla-flavoured stevia until the strawberries are soft and the juice has thickened.
6.Remove the pan from heat and stir in the chia seeds (or white Salba).
7.Divide the filling evenly among the six tartlettes, then bake them in the preheated oven for 12-15 minutes, or until the edges are golden brown.
8.Remove the tartlettes from oven and allow them to cool for 5 minutes in their pans, then remove them from the pans and cool completely on a wire rack.
9.Serve the tartlettes as they are or garnish with additional fresh strawberries, whipped cream or ice cream. Enjoy!
