Ingredients

1/2 cup raw converted rice
1 cup water
1/2 cup raw Minute brown rice
1 tablespoon tomato paste
1/4 cup tomato juice or 1/4 cup vegetable juice
1/2 tablespoon garlic powder

1 teaspoon brown sugar
1 teaspoon oregano
1/2 teaspoon black pepper
1/2 teaspoon dried basil
1/2 tablespoon dried parsley
1 teaspoon salt
4 1/2 cups crushed tomatoes
10 large cabbage leaves
1/2 tablespoon olive oil
3/4 lb extra lean ground beef
1/2 onion , grated
1 carrot , finely grated
1 stalk celery , diced

Instructions

1.Preheat oven to 375°F.
2.In a large pot, cook the converted rice in water according to package directions. In a separate small pot, cook the brown rice according to package directions.
3.In a medium mixing bowl, combine cooked brown rice, tomato paste, tomato juice, garlic powder, onion powder, brown sugar, oregano, black pepper, dried basil, dried parsley, and salt. Mix well and set aside.
4.In a large pot, heat olive oil over medium-high heat. Add extra lean ground beef and brown. Add in grated onion, grated carrot, and diced celery. Cook until vegetables are soft, about 5 minutes.
5.Add in crushed tomatoes and the cooked rice. Stir well.
6.Place 5 cabbage leaves on the bottom of a 9x13 inch baking dish. Spread about 1/2 of the rice/tomato mixture on top of the cabbage leaves. Repeat layers, ending with a final layer of cabbage leaves.
7.Cover with aluminum foil and bake for 45 minutes.
8.Remove foil and bake for an additional 10-15 minutes or until heated through.
