Ingredients

1 whole chicken , cut in 8 pieces
1/4 cup all-purpose flour
oil
2 cups hard alcoholic cider
1/2 cup tomato sauce
1 medium leek , sliced
4 tablespoons heavy cream
1 bay leaf
salt , to taste
ground black pepper , to taste
chopped parsley ( garnish ) or chopped chives ( garnish )

Instructions

1.Preheat the oven to 175°C/350°F.
2.Season the chicken pieces with salt and black pepper.
3.Coat the chicken pieces in flour, shaking off any excess.
4.In a large oven-safe pot, heat the oil over medium heat. Add the chicken pieces and cook until browned on both sides, about 5 minutes per side.
5.Pour the cider and tomato sauce over the chicken.
6.Add the leek and bay leaf to the pot. Cover and place in the oven.
7.Cook for 1 hour, or until the chicken is cooked through and tender.
8.Remove the pot from the oven and take out the chicken. Discard the bay leaf.
9.Over medium heat, bring the remaining sauce to a boil. Cook until reduced, about 5 minutes.
10.Stir in the cream and season with salt and black pepper to taste.
11.Plate the chicken and pour the sauce over the top. Garnish with chopped parsley or chives.
