Instructions

1.Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2.Grate the zucchini and potato into a mixing bowl.
3.Add the onion, cheddar cheese, flour, egg, salt, pepper, dill, and garlic powder to the bowl, and stir to combine all ingredients well.
4.Using a spoon, scoop mixture into patties and flatten them slightly with the back of a spoon.
5.Place the latkes onto the prepared baking sheet, and bake in the oven for 15 minutes or until golden brown.
6.Flip the latkes over and bake for another 10 minutes, or until crispy and golden brown on both sides.
7.Serve hot with sour cream or your favourite dip, and enjoy!
