Instructions

1.Blend together the silken lite soft tofu, salt, sugar, curry powder, cinnamon, and fresh lemon juice until smooth. Set aside.
2.Heat the canola oil in a pan over medium heat and sauté the chopped almonds until they are lightly toasted. Remove from heat and set aside.
3.In a large mixing bowl, combine the diced celery, diced apples, chopped chives/green onion tops, and raisins.
4.Pour the tofu curry sauce over the mixed ingredients and toss gently until everything is coated with the sauce.
5.Add the toasted almonds to the salad and mix again.
6.Chill the salad in the refrigerator for at least 30 minutes before serving.
