Instructions

1.Preheat the oven to 350°F (180°C) and grease a 9-inch (23 cm) springform pan with room temperature butter.
2.In a small saucepan, combine the sugar, heavy cream, unsalted butter, and kosher salt. Heat over medium heat, stirring occasionally until the mixture starts to boil.
3.Reduce the heat to low and simmer for 5-7 minutes, stirring frequently, until the mixture thickens and turns golden brown. Set aside.
4.In a large bowl, whisk together 1 1/4 cups of flour, 2 tablespoons of sugar, baking powder, kosher salt, and lemon zest. Set aside.
5.Peel and core the apples, then cut them into thin slices. Toss the apple slices with 1 cup of sugar in a medium bowl and let sit for 10 minutes.
6.Add the melted butter to the flour mixture and stir until a crumbly dough forms. Add the eggs one at a time, whisking well after each addition. Stir in half of the caramel sauce.
7.Use a slotted spoon to transfer the apples to the bottom of the prepared pan, arranging them in a circular pattern. Pour the caramel sauce over the apples, spreading it evenly. Spoon the dough over the caramel, smoothing the surface with a spatula.
8.Bake for 45-50 minutes, until the top is golden and a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
9.Serve with a dollop of creme fraiche.
