1 box orange cake mix
1 can peach pie filling
2 eggs
1/2 cup sour cream

Instructions

1.Preheat your oven to 350°F.
2.Combine orange cake mix, peach pie filling, sour cream and eggs in a mixing bowl. Mix thoroughly.
3.Pour mixture into a 9-inch baking dish and bake in preheated oven for 30-35 minutes.
4.Let the cake cool in the pan for 10 minutes and then invert onto a wire rack to cool completely.
5.Drain the pineapple and reserve the juice.
6.In a medium bowl, combine the pineapple juice, instant vanilla pudding, and cream cheese. Whisk until the mixture is fully incorporated.
7.Once the cake is cool, poke holes all over it with a fork or toothpick. Pour the pudding mixture over the cake. Spread the mixture evenly over the top of the cake.
8.Place the cake in the refrigerator and chill for at least one hour.
9.Meanwhile, toast the shredded coconut in a skillet over medium heat until it turns golden brown. Set aside.
10.After chilling, top the cake with whipped cream and toasted shredded coconut before serving.
