Ingredients

9 slices ordinary white bread
2 tablespoons butter , melted
1 tablespoon canola oil
1 lb ground lean pork
1/2 cup finely chopped onion , about 1 small yellow onion
1 large garlic clove
1 stalk celery , finely diced
1 small carrot , finely diced
1 teaspoon chopped fresh thyme or 1/4 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon dried summer savory
1/4 teaspoon fresh ground black pepper
3/4 3/4 cup chicken stock or 3/4 cup beef stock
2 tablespoons finely chopped fresh parsley
2 -3 tablespoons Dijon mustard
3 fresh thyme sprigs

Instructions

1.Preheat your oven to 350°F (175°C).
2.Using a rolling pin, flatten each slice of bread and remove crusts.
3.Brush bread slices with melted butter and cut out 16 2.5-inch (6.25cm) rounds.
4.Tuck each slice into mini muffin cups to form small cups.
5.In a large skillet, heat the canola oil over medium heat.
6.Add the pork, onions, garlic, celery, carrot, thyme, salt, cloves, summer savory, and pepper to the oil. Cook until meat is browned and fully cooked.
7.Drain away the excess fat.
8.Add the chicken or beef stock to the pork mixture and cook for 5 minutes until thickened.
9.Stir in the parsley and mustard.
10.Fill each bread cup with pork filling and place a fresh thyme sprig on top.
11.Bake at 350°F (175°C) for 15 minutes or until the cups are slightly crispy.
