Ingredients

2 tablespoons olive oil
5 cups sliced brown mushrooms
1 red bell pepper , chopped fine
1/2 cup grated carrot
1 medium yellow onion , chopped fine
2 -3 cloves garlic , minced
1 teaspoon dried basil
1 egg , beaten
1/4 cup chili sauce , like heinz
1/2 cup dry breadcrumbs , like progresso
1/2 teaspoon salt
1/2 teaspoon pepper
1 1/2 lbs ground venison
2 tablespoons flour
1 1/2 cups beef stock
2 tablespoons red wine vinegar
Venison Mushroom Meatloaf is a perfect dish for wild game lovers. This recipe uses ground venison as the primary ingredient, mixed with vegetables and spices. Instructions

1.Preheat your oven to 350°F.
2.Heat 1 tablespoon of olive oil in a skillet over medium heat. Add mushrooms and stir occasionally until it is soft and most of the liquid have evaporated, which should take 6-8 minutes.
3.Add red pepper and stir for 2 minutes.
4.In the same skillet, add grated carrot, finely chopped onions, garlic and dried basil. Stir and cook until the onions start to soften.
5.Remove the skillet from heat and let it cool.
6.In a bowl, combine beaten egg, chili sauce, salt, pepper, and breadcrumbs.
7.Add the cooked vegetables and ground venison to the bowl of egg mixture, and use your hands to mix well together.
8.Place the mixture in a prepared baking sheet.
9.Bake the meatloaf for 45 minutes.
10.In the same skillet, heat 1 tablespoon of olive oil and sprinkle flour. Stir for a minute and add beef stock and red wine vinegar. Cook until it thickens to form smooth gravy.
11.Serve the meatloaf with gravy and mashed potatoes, if desired.
