1 yellow onion , peeled and diced
2 tablespoons olive oil
1/2 cup cherry tomatoes , stems removed
4 fluid ounces extra virgin olive oil
1/4 cup fresh basil leaf
8 fluid ounces heavy cream
3 cloves garlic
3 tablespoons grated parmesan cheese

Instructions

1.Preheat the oven to 450°F

11.In a blender, puree the roast tomatoes and garlic with heavy cream and grated parmesan cheese until smooth
12.Transfer the soup into a large pot and simmer it on low heat for 10 minutes until it starts to thicken
13.Serve the soup hot with toasted bread or croutons
