Ingredients

3 - 3 1/2 lbs lean pork ( Lean pork butt or shoulder works perfectly . I use boneless pork chops as it is just less work for me )
1 small onion , minced
1 tablespoon kosher salt ( course )
1 1/4 teaspoons dried sage
1 teaspoon dry mustard
3/4 teaspoon fresh ground black pepper ( Fine grind )
1/4 cup pure maple syrup
2 tablespoons milk

Instructions

1.Start by grinding the pork using a meat grinder with the appropriate blade for a single grind. Make sure the pork is well chilled and the equipment is clean.
2.In a mixing bowl, combine the ground pork, minced onion, kosher salt, dried sage, dry mustard, fresh ground black pepper, maple syrup, and milk. Mix everything well and knead the sausage mixture for a couple of minutes to distribute all the seasonings evenly.
3.Cover the bowl with cling wrap and refrigerate overnight to allow the flavors to meld.
4.The following day, divide the sausage mixture into patties or sausage links.
5.Heat up a frying pan over medium-high heat, add a little bit of oil if needed, and start cooking the sausages until they are golden brown and cooked through.

PROS

Homemade maple sausage is much more flavorful than store-bought alternatives and contains healthier ingredients without any preservatives or additives.

This recipe requires some time and effort, and you need a meat grinder to make it.
