Ingredients

1 package Jello gelatin ( I like cherry , especially if using marshmallows for hot chocolate ! )
1/4 cup boiling water
1/2 cup water
2/3 cup sugar
1 pinch sea salt
2 tablespoons clear corn syrup
icing sugar and potato starch , for dusting

Instructions

1.In a large mixing bowl, combine the gelatin and boiling water. Whisk until the gelatin is completely dissolved.
2.In a small saucepan, combine the water, sugar, sea salt, and corn syrup. Heat over medium heat, stirring frequently, until the mixture comes to a boil.
3.Remove the saucepan from heat and pour the mixture into the mixing bowl with the gelatin. Beat on high speed with an electric mixer for approximately 15 minutes, or until the mixture has tripled in volume and appears fluffy and thick.
4.When the marshmallow mixture is ready, pour it into a greased 9x13 inch baking dish and smooth the surface.
5.Let the marshmallows cool for at least an hour.
6.Once cooled, dust a clean surface with a mixture of icing sugar and potato starch. Remove the marshmallows from the baking dish and place them on the dusted surface. Cut into small squares.
7.Toss the marshmallows in the icing sugar-potato starch mixture until they are completely coated. Shake off the excess coating and store the marshmallows in an airtight container.
