Triple-Onion Baked Potatoes are a fun twist on the classic baked potato. The dish is simple to prepare and contains basic ingredients found in most kitchens. The combination of bacon, onions, and a blend of American and cheddar cheeses produces a gooey, savory filling. The sour cream and milk mixture makes the filling creamy, while baked potatoes become crispy on the outside and tender on the inside. Topping with green onions adds a pop of color and freshness. These tasty potatoes are a great side for grilled meat, fish, or veggies. And, the best part is that you can customize the recipe by adding more or less of your favorite ingredients.

Instructions

.Preheat oven to 400°F (200°C).
.Scrub potatoes clean and pat dry; prick each all over with a fork to allow steam to escape.
.Place potatoes in the oven and bake for about an hour, or until tender. Remove from oven and set aside to cool.
.In a large skillet, cook diced bacon over medium heat until crispy, about 6-8 minutes. Using a slotted spoon, remove bacon from skillet and set aside.
.Add chopped red onion and yellow onion to the same skillet used for the bacon and cook over medium heat until the onions are soft and translucent, about 5 minutes.
.In a small bowl, mix sour cream and milk together until they are thoroughly combined.
.Slice the baked potatoes in half lengthwise, and using a spoon, scoop out the flesh into a large mixing bowl, leaving about 1/4-inch of potato attached to the skin.
.To the mixing bowl, add American cheese, bacon, cooked onions, and the sour cream mixture. Mix well and then spoon the mixture back into the potato skins.
.Top with shredded cheddar cheese and sliced green onions.
.Return the potatoes to the oven and bake until the cheese is melted, bubbly, and golden brown, about 10-15 minutes.
.Remove from oven, let cool for a few minutes, then serve hot.
