2 cups dried black-eyed peas
2 egg whites
1 teaspoon salt

Instructions

1.Soak the dried black-eyed peas in water in a large bowl for at least 8 hours or overnight.

4.Add the egg whites, salt, flour, and cayenne pepper to the bowl with the blended peas. Mix well until fully combined.
5.Meanwhile, heat the vegetable oil in a deep frying pan over medium-high heat.
6.Using a tablespoon, scoop the batter and gently place it in the hot oil. Fry for 2-3 minutes on each side or until golden brown.
7.Drain the fritters on a paper towel and serve hot with your favourite dipping sauce.
