Ingredients

1 ham hocks or 1 ham bone
2 medium onions
1 carrot
2 sticks celery
1 bay leaf

4 cups onions , diced
2 cups celery , diced

1 can beans ( can of 'mixed bean medely ' , or a total of four cups mixed cooked beans )
1 can diced tomatoes ( or diced tomato with italian herbs , if available )
1 bay leaf
1 tablespoon italian seasoning mix
salt and pepper

Instructions

2.Remove the ham hocks or bone from the pot, and discard. Add to the pot the diced onions, celery, and carrots, and simmer for 30 minutes.
3.In a large skillet over medium heat, add the olive oil and garlic. Sauté until fragrant, about 2 minutes. Add the all-purpose flour to the skillet and stir until well combined.
4.Slowly add the flour mixture to the pot, stirring constantly to prevent lumps. Add the cooked ham, mixed beans, diced tomatoes, bay leaf, and Italian seasoning mix. Simmer for 30 minutes.
5.Season with salt and pepper to taste.
