3 tablespoons dijon-style mustard
12 slices smoked ham
1 egg
1 tablespoon water

Instructions

1.Preheat oven to 375F.
2.In a large bowl, whisk together flour, sugar, baking powder, black pepper, and salt.
3.Add butter and cheese and toss until coated and crumbly.
4.In a small bowl, whisk together egg yolks and 1/2 cup ice water.
5.Add egg mixture to the flour mixture and mix until moistened. Add more ice water if the dough is too dry.
6.Working with half of the dough at a time, roll out on a floured surface to a 1/4-inch thickness. Cut into 12-inch rounds and place on parchment paper-lined baking sheets.
7.In a large bowl, toss together apples, melted butter, apple jelly, and lemon juice. Spread dijon-style mustard on the dough rounds, leaving a 1-inch border.
8.In the center of the rounds, place a slice of ham and then top with apple mixture.
9.Fold the edges of the dough up over the filling, crimping to seal.
10.Whisk together egg and water and brush over the crust.
11.Bake for 30-35 minutes, or until the crust is golden brown. Serve warm.
