1 -2 tablespoon crushed toasted pine nuts
This Pumpkin Banana Cake with Toasted Pine Nuts is a perfect dessert for any fall gathering, or even as a snack. Instructions

1.Preheat oven to 375 degrees Fahrenheit, and grease a 9 inch cake pan.
2.In a large bowl, cream butter and brown sugar until light and fluffy.
3.Beat in eggs, pumpkin, and mashed banana.
4.In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
5.Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
6.Fold in 3/4 cup of the toasted pine nuts.
7.Pour batter into the prepared cake pan.
8.In a small bowl, mix together the remaining toasted pine nuts, brown sugar, butter, nutmeg, cinnamon, ginger, and cream until well combined.
9.Sprinkle mixture over the top of the cake batter.
10.Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely before serving.
