1/2 cup shortening
1/4 cup butter
2 tablespoons grated fresh ginger
3/4 cup demerara sugar
1/4 cup molasses
1 tablespoon corn syrup
1 egg
1 cup flour
1 1/4 cups oat flour
1 tablespoon cornstarch
2 teaspoons baking soda
1 pinch salt
1/2 teaspoon cinnamon
1/2 teaspoon cardamom
1 tablespoon ground ginger
1/2 teaspoon clove
1/3 cup minced crystallized ginger , 25 pieces reserved for topping

Instructions

1.Preheat the oven to 350°F (180°C).
2.In a large bowl, cream together the shortening, butter, and grated ginger until light and fluffy.
3.Add the demerara sugar, molasses, corn syrup, and egg into the butter mixture, and mix until well combined.
4.In a separate bowl, whisk together the flour, oat flour, cornstarch, baking soda, salt, cinnamon, cardamom, ground ginger, and clove until evenly blended.
5.Slowly add the dry ingredients to the wet ingredients, stirring until just combined to form a dough.
6.Fold in the minced crystallized ginger.
7.Line a baking sheet with parchment paper.
8.Roll the dough into small balls, and place them 2 inches apart on the baking sheet.
9.Flatten the balls slightly, and press a piece of crystallized ginger on top of each cookie.
10.Bake the cookies for 10-12 minutes, until the edges are golden brown.
11.Remove the cookies from oven, and let cool for 5 minutes on baking sheet.
12.Transfer the cookies to a wire rack, and let cool completely.
