Carbonara sauce is a classic Italian pasta sauce made with bacon, eggs, and parmesan cheese. It's a comfort food that is perfect for a cold winter night or to celebrate a special occasion. The recipe has been passed down through my family by my grandmother, who is a fantastic cook. The combination of salty bacon, creamy parmesan cheese, and savory garlic makes this sauce a fan favorite.

Instructions

.Heat a large pot of salted water to boiling, add pasta and cook according to package directions.
.Meanwhile, cook bacon in a large skillet over medium heat until crisp. Remove bacon and set aside on a paper towel to drain.
.Add onion and garlic to the bacon fat in the skillet and cook until softened.
.Add the ground beef to the skillet and cook until no longer pink.
.Add the crushed tomatoes, tomato paste, sweet basil, salt and pepper. Simmer for a few minutes, stirring often.
.In a separate bowl, whisk together the egg, milk, and parmesan cheese.
.Once the pasta is cooked, reserve 1 cup of pasta water and drain the remainder. Return pasta to pot.
.Pour the egg mixture over the hot pasta and stir until well combined. Add the bacon and the sauce from the skillet to the pasta and stir well. If needed, add some of the reserved pasta water to thin out the sauce. Serve hot with extra parmesan cheese on top.
