188 g whole wheat penne
1/2 teaspoon salt
1 lb extra lean ground beef
1 can stewed tomatoes
1 jalapeno pepper , seeded and chopped ( optional )
1/2 cup parmesan cheese , grated or shredded
salt & fresh ground pepper , to taste
2 cups packed fresh spinach
vegetable oil cooking spray
1 cup sharp cheddar cheese , shredded
Burger Baked Penne With Spinach is a hearty and delicious pasta bake that's perfect for busy weeknights. Instructions

1.Preheat oven to 375°F (190°C).
2.Cook penne according to package instructions, adding half a teaspoon of salt to the water. Drain and set aside.
3.In a large skillet over medium heat, cook the ground beef until browned, then drain the excess fat. Stir in the stewed tomatoes (with juice) and chopped jalapeno pepper (if using) until well combined.
4.Add the cooked penne, parmesan cheese, salt, and pepper to the skillet with the beef mixture. Stir gently until evenly mixed.
5.Spread half of the penne mixture evenly into a baking dish coated with vegetable oil cooking spray. Top with the spinach, then cover with the rest of the penne mixture.
6.Sprinkle shredded cheddar cheese over the top of the penne mixture.
7.Cover the baking dish with foil and bake for 20-25 minutes, uncovering for the last 5 minutes to let the cheese brown and bubble.
