1 can chicken broth , divided ( low sodium )
6 Ritz crackers , finely crushed
4 small boneless skinless chicken breasts
2 teaspoons vegetable oil
1/3 cup philadelphia cream cheese with garlic and herbs , spread
375 g asparagus spears , trimmed and steamed
2 tablespoons parmesan cheese
This Parmesan crusted chicken with creamy asparagus sauce is a delicious and healthy meal that is perfect for a quick weeknight dinner or a fancy weekend meal. Instructions

1.Preheat oven to 375°F (190°C).
2.Prepare Minute Rice according to package directions using 1 cup of chicken broth and 1 cup of water.

4.Coat each chicken breast with vegetable oil and coat in the cracker mixture.
5.Place chicken in a greased baking dish and bake for 25-30 minutes or until fully cooked.
