Ingredients

8 lamb chops
smashed garlic ( enough to rub on all lamb chops )
salt and pepper
onion ( enough to cover lamb chops , cut in half rings )
butter
1 1/2 cups tomato juice
1 tablespoon Worcestershire sauce
2 slices Canadian bacon , cooked crisp and broken
1 tablespoon butter
2 1/2 tablespoons flour
1/4 cup tomato juice
salt and pepper
2 -3 tablespoons sherry wine

Instructions

1.Preheat broiler.
2.Rub each chop with smashed garlic and sprinkle with salt and pepper.
3.Place lamb chops on broiling pan (or a baking sheet with a wire rack), and put under the broiler.
4.Cook for 5-7 minutes (medium-rare), 7-9 minutes (medium), or 9-11 minutes (well done).
5.About 3 minutes before done, put the onion rings on top of the lamb chops and spread with butter.
6.In a medium saucepan, combine tomato juice, Worcestershire sauce, and Canadian bacon.
7.Simmer for 10-12 minutes.
8.Make a roux with the butter and flour, gradually adding the roux to the tomato mixture as it thickens.
9.Finish the sauce with tomato juice, salt, and pepper.
10.Deglaze the pan with the sherry wine, and top the lamb chops and onions with the tomato sauce.
