1/2 head romaine lettuce ( depends on number of servings )

Instructions

1.Preheat the oven to 400°F (200°C).
2.In a bowl, whisk together the miso paste, mirin, sugar, red pepper flakes, ginger powder, and sake or white wine.
3.Place the salmon fillets in a baking dish, skin side down.
4.Cover the salmon fillets with the marinade, making sure they are well coated.
5.Bake the salmon in the oven for 14-18 minutes, or until the thickest part reaches an internal temperature of 145°F (63°C).
6.While the salmon is cooking, cut the cucumber into thin slices and separate the lettuce leaves.
7.Serve the salmon with the cucumber and lettuce on the side. Enjoy!
