Ingredients

1 cup unsalted butter
1/2 cup granulated sugar
4 eggs
3 cups all-purpose flour

4 cups Italian cheese blend , grated fontina , mozzarella , Asiago , provolone
1/2 cup sunflower seeds
1/2 cup pumpkin seeds

Instructions

1.Preheat the oven to 350°F and line a baking sheet with parchment paper.
2.In a large bowl, beat the butter and sugar together until light and fluffy.
3.Add the eggs one at a time, mixing well after each addition.
4.In a separate bowl, whisk together the flour, cornmeal, baking powder, cayenne, black pepper, and rosemary.

7.Form the dough into two logs and place them on the prepared baking sheet.
8.Bake for 35-40 minutes, or until the logs are firm to the touch and lightly browned.
9.Remove from the oven and let the logs cool for about 10 minutes.
10.Reduce the oven temperature to 325°F.
11.Using a sharp knife, slice the logs into 1/2 inch thick pieces.
12.Place the slices back onto the baking sheet and bake for an additional 25-30 minutes, or until the biscotti are crisp and golden brown.
13.Remove from the oven and let cool completely.
