Instructions

1.Preheat oven to 350F.
2.In a saucepan, melt 1/2 cup unsalted butter on low heat.
3.Add sugar and cocoa and stir until combined.
4.Add the beaten egg and stir until mixture thickens.
5.Remove from heat and mix in graham wafer crumbs, pecans, and coconut flakes.
6.Press mixture firmly into an 8 x 8 inch square pan lined with parchment paper and chill in the fridge for 1 hour.
7.In a separate bowl, mix 1/2 cup unsalted butter, cream, vanilla custard powder, icing sugar, and pureed peach preserves until light and fluffy.
8.Spread the mixture over the chilled crust and chill for another hour.
9.In a heatproof bowl, melt chocolate chips and 4 tablespoons of unsalted butter in a microwave or double boiler.
10.Stir until mixture is smooth and shiny.
11.Spread the melted chocolate over the chilled filling and return to the fridge for another hour until firm.
12.Cut into bars before serving.
