Ingredients

1 lb chicken breasts ( cut in half ) or 1 lb chicken tenderloins
1 tablespoon Mrs . Dash seasoning mix
1 tablespoon butter
2 tablespoons olive oil
1/2 yellow onion , diced
3 garlic cloves , minced
12 ounces mushrooms , sliced
2 zucchini , cut in bite-size chunks
2/3 cup sun-dried tomato
2 cans fire roasted diced tomatoes
1 teaspoon italian seasoning
salt and pepper , to taste
1 teaspoon balsamic vinegar ( optional )

Instructions

1.Season the chicken breasts with Mrs. Dash and set them aside.
2.Melt butter in a large skillet over medium-high heat, then add olive oil.
3.Add the seasoned chicken breasts and cook for 5-6 minutes on each side until golden and cooked through, then remove them from the pan and set them aside.
4.In the same skillet, add onion and garlic and sauté for 2-3 minutes until fragrant.
5.Stir in mushrooms and zucchini and cook for 5-6 minutes until they begin to soften and brown.
6.Add sun-dried tomatoes, canned tomatoes, and Italian seasoning to the skillet and stir to combine. Season with salt and pepper to taste.
7.Reduce the heat to medium-low, add the chicken back to the skillet, and let everything simmer together for 5-10 minutes.
8.Drizzle balsamic vinegar on top (optional) and serve warm.
