Ingredients

1 cup flour
1 teaspoon baking powder

1/3 cup clam juice
2 eggs ( beaten )
1/3 cup milk
2 teaspoons butter , melted
1 geoduck clam ( cleaned and diced , see note )
vegetable oil ( for frying )
lemon wedge ( to garnish )

Geoduck Fritters are made from a combination of diced geoduck clam, flour, egg, milk, and spices. The fritters are deep-fried until crispy golden brown, creating a delicious snack or appetizer that is perfect to serve at parties or family dinners.

Instructions

1.In a medium-sized bowl, add the flour, baking powder, salt, and pepper.
2.Whisk to combine all the dry ingredients.
3.Gradually add the clam juice, beaten eggs, milk, and melted butter while whisking the mixture until smooth.
4.Add in the diced geoduck clam and stir.
5.In a large deep-sided frying pan, heat vegetable oil over high heat.
6.Once hot, using a table spoon or a cookie scoop, scoop out the clam fritter mixture into the hot oil.
7.Fry the fritters for 2 to 3 minutes on each side or until golden brown.
8.Remove the fritters from the oil and place them on a paper towel-covered plate to remove excess oil.
9.Serve hot with lemon wedges as garnish.
