8 carrots ( about 1-1/2 lb/750 g )
3/4 cup chicken stock or 3/4 cup vegetable stock
2 tablespoons liquid honey
1/4 teaspoon salt

2 tablespoons butter

Instructions

1.Preheat oven to 375°F (190°C).
2.Peel and cut carrots diagonally into 1/4-inch (5 mm) thick slices.
3.In an 8-inch (2 L) square baking dish, mix together chicken or vegetable stock, honey, salt, pepper, and nutmeg.
4.Stir in carrots until coated.
5.Dot with butter and sprinkle with sliced almonds.
6.Bake, uncovered, for about 45-50 minutes or until carrots are tender.
