Ingredients

1 1/2 lbs ground pork

1 lb russet potato
2 1/2 cups all-purpose flour
3/4 teaspoon salt
3/4 cup cold unsalted butter , cut into 1/2-inch cubes
1/2 cup ice water , plus additional if needed
1 egg yolk
1 teaspoon water

Instructions

1.In a skillet, brown the pork with onions until the meat is no longer pink. Drain any excess fat.
2.Add allspice, cloves, salt, and pepper, then add water and bring to a boil. Reduce heat and simmer, stirring occasionally, until all liquid is evaporated. Cover and cook for another 15-20 minutes until meat is fully cooked. Let it cool then break it up into small pieces.
3.Boil the potatoes in salted water until tender. Drain, let cool, and grate them.
4.In a large bowl, whisk flour and salt together. Add the butter and use a pastry cutter until the mixture resembles coarse breadcrumbs. Gradually pour in the ice water and mix with your hands until dough comes together.
5.Divide the dough into two parts. Roll out the first part and place it on a pie dish.
6.Add the meat filling and grated potatoes on top of the pastry. Roll out the second part of the dough, then cover the filling. Press the edges of the pastry firmly together. Cut slits on the top of the pastry to allow for steam to escape.
7.Mix the egg yolk with water, then brush onto the top of the pastry.
8.Bake in a preheated oven at 425 degrees Fahrenheit for 15 minutes, then reduce the heat to 375 degrees Fahrenheit and bake for another 30-35 minutes, or until the pastry is golden brown.
