Instructions

1.Preheat the grill to medium-high heat.
2.In a small bowl, combine brown ale, parsley, salt, red pepper flakes, black pepper, malt vinegar, olive oil, and garlic. Mix well and set aside.
3.Cut poblano chiles or sweet peppers and leek lengthwise into thin strips.
4.Sprinkle the flank steak with coarse salt and lay it flat on a piece of plastic wrap on a baking sheet.
5.Arrange the poblano chiles or sweet peppers, leek, shaved ham, and Monterey Jack cheese over the steak, leaving a small border around the edges.
6.Roll up the steak tightly, using the plastic wrap to help you.
7.Remove the plastic wrap and secure the roll with kitchen twine.
8.Brush the steak roll with the marinade, making sure to coat it evenly.
9.Grill for 25–30 minutes, turning occasionally, until the steak is cooked to your desired doneness.
10.Remove from the grill and let sit for 10 minutes before slicing.
