Ingredients

1 cup red lentil
2 tablespoons virgin olive oil
1 onion , finely chopped
1 -2 carrot , finely chopped
1 -2 celery rib , finely chipped
3 garlic cloves , crushed
2 large tomatoes , halved chopped ( seeds removed )
6 cups low-sodium low-fat chicken broth
2 tablespoons tomato paste
1 large bay leaf and 2 small bay leaf ( ves )
1 teaspoon dried marjoram
2 boneless skinless chicken breasts
1 cup buttermilk ( optional )
salt and pepper
freshly grated parmesan cheese
balsamic vinegar
This lentil soup with grilled chicken is a comforting and hearty bowl of soup that's perfect for colder days. The lentils are simmered with vegetables, chicken broth, and warming spices before being blended into a smooth and creamy soup. Grilled chicken adds a deliciously smoky flavor and an extra boost of protein, making this soup a complete meal. This soup can be made without the chicken for a vegetarian option.

Instructions

1.Rinse and soak the lentils in cold water for at least an hour.
2.In a large pot, heat the olive oil over medium heat and sauté the onion, carrots, celery, and garlic until they are soft and translucent.
3.Add the chopped tomatoes, chicken broth, tomato paste, bay leaves, and marjoram to the pot.
4.Drain the lentils and add them to the pot. Bring the soup to a boil, then reduce the heat and let it simmer for 45-60 minutes or until the lentils are tender.
5.Preheat the grill to medium-high heat. Season the chicken breasts with salt and pepper and grill for 6-7 minutes per side or until cooked through.
6.Remove the bay leaves from the soup and blend it using an immersion blender or a regular blender.
7.Serve the soup hot with slices of grilled chicken on top, a drizzle of buttermilk (optional), freshly grated parmesan cheese and a splash of balsamic vinegar on top.
