Ingredients

1 lb cavatelli or 1 lb penne , uncooked
1 1/2 cups diced plum tomatoes
1/2 cup chopped pimento stuffed olive
1/4 cup drained capers
2 tablespoons olive oil
2 tablespoons grated parmesan cheese
2 tablespoons balsamic vinegar or 2 tablespoons red wine vinegar
1/2 teaspoon black pepper
2 minced garlic cloves
1 pinch red pepper flakes

Instructions

1.Cook the Cavatelli as per the instructions given on the package.
2.Heat oil in a pan over medium heat and add garlic, black pepper and red pepper flakes. Sauté for a minute.
3.Add the diced tomatoes, chopped olives and capers. Cook for another 5-7 minutes until tomatoes are softened.
4.Add cooked cavatelli to the pan along with balsamic vinegar and parmesan cheese. Mix well.
5.Top with chopped parsley and serve warm.
