1/4 cup stevia , baking blend ( I used Krisda )
2 tablespoons dark brown sugar
1 teaspoon vanilla extract
1/4 cup unsweetened almond milk
1 teaspoon rice vinegar
1 cup whole wheat pastry flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon sea salt
1/2 teaspoon cinnamon
1 egg
2 packets caramel-flavoured stevia ( I used Krisda )
1 apple , peeled cored and diced
3 tablespoons slivered almonds , toasted
1/2 tablespoon large-flake rolled oats
1/2 tablespoon sliced almonds
1 teaspoon turbinado sugar

Instructions

1.Preheat the oven to 350°F and line a 12-cup muffin tin with muffin liners.

3.In a separate bowl, sift together the whole wheat pastry flour, baking soda, baking powder, sea salt, and cinnamon.
4.Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
5.In a small bowl, beat the egg and caramel-flavoured stevia together until frothy.
6.Add the egg mixture to the batter and stir until well combined.
7.Fold in the diced apple and toasted slivered almonds.
8.In a separate bowl, combine the large-flake rolled oats, sliced almonds, and turbinado sugar.
9.Spoon the batter into the prepared muffin cups and sprinkle the oat-almond mixture over the muffins.
10.Bake for 18-20 minutes or until lightly golden and a toothpick inserted in the center comes out clean.
11.Cool for 5 minutes in the muffin tin before transferring to a wire rack to cool completely.
