Ingredients

1/3 cup scotch
8 boneless skinless chicken breasts , each cut into 3 pieces horizontally , white tendons removed ( leaving you with 24 pieces )
3 garlic cloves
1/2 cup lite olive oil or 1/2 cup vegetable oil
1/3 cup honey
1/3 cup soy sauce
3/4 teaspoon salt ( or less )
pepper
2 large lemons , scored and sliced
24 large mushrooms , cleaned , stems removed
12 large green onions , cleaned , white parts only cut into 2 inch pieces
2 large green peppers , seeded , cut into 2 inch squares
2 large red peppers , seeded , cut into 2 inch squares
fresh parsley ( to garnish ) ( optional )

Instructions

1.Preheat your oven to 350°F.

4.Add the chicken to the bowl with the marinade, toss, and marinate in the fridge for 20-30 minutes.
5.Skewer the chicken pieces onto wooden or metal skewers, alternating with lemon slices, green onions, mushrooms and peppers pieces.
6.Place the skewers on a baking dish and bake in the preheated oven for 20-25 minutes, turning often and basting the chicken with leftover marinade.
7.Once cooked, remove from oven and let rest for 5 minutes. Serve hot garnished with fresh parsley if desired.
