1 package kielbasa sausage , cut into 1 inch pieces
1 pound cooked chicken meat , shredded
2 tablespoons Cajun seasoning , or to taste , divided

3 stalks celery , chopped
1 large green bell pepper , chopped
1/4 cup all-purpose flour
2 quarts chicken broth , or as needed
1 1/2 cups uncooked white rice
1 pound uncooked medium shrimp , peeled and deveined
1 tablespoon ground black pepper , or to taste

2 prepared pie crusts
1 beaten egg

Instructions

1.Preheat the oven to 375 degrees F (190 degrees C).
2.Heat the canola oil in a large skillet over medium-high heat.
3.Add the kielbasa and chicken meat to the skillet and season with 1 tablespoon of Cajun seasoning and 1 tablespoon of Cajun blackened seasoning. Cook for 5-7 minutes or until browned.
4.Add the onion, celery, and bell pepper to the skillet and cook for an additional 5 minutes.
5.Sprinkle the flour over the vegetables and cook, stirring constantly, for 2 minutes.
6.Slowly stir in the chicken broth and bring the mixture to a boil. Reduce the heat to low and simmer for 15-20 minutes or until the mixture thickens.
7.Stir in the rice, shrimp, black pepper, cayenne pepper, and remaining Cajun seasonings.
8.Pour the mixture into an oven-safe baking dish lined with one prepared pie crust. Place the second pie crust over the top of the mixture and brush with beaten egg to seal. Cut a few slits in the top of the pastry to vent.
9.Bake for 30-35 minutes or until the pastry is golden brown and the filling is bubbly.
