Ingredients

1 1/2 kg damson plums
2 -3 cups water
4 -6 cups sugar
Damson plum jam is a traditional English recipe that has been around for generations. These small, oval-shaped fruits are known for their tart, slightly bitter taste and deep-purple skin. They are often used in jams and jellies due to their high pectin content, which helps the finished product set. Damson plum jam is easy to make at home, and it's a great way to use up a bumper crop of plums. The jam is deliciously sweet and tangy and can be enjoyed on a variety of breads and pastries. It also makes a great glaze for pork and chicken dishes. Try this recipe for a taste of traditional English cuisine that's sure to impress your friends and family.

Instructions

1.Rinse the damson plums and remove the stems and pits. Cut them into quarters.
2.In a large pot, add the plums and water. Bring to a boil over medium-high heat. Lower the heat and let it simmer, stirring occasionally, for 45 minutes to 1 hour, or until the fruit has softened.
3.Add the sugar to the pot and bring the mixture to a boil on high heat. Stir constantly to dissolve the sugar. Turn the heat down to medium and keep stirring to prevent the jam from sticking and burning.
4.To test the jam's readiness, spoon a small amount onto a cold plate and let it cool for a minute. If it sets and wrinkles when you push it with your finger, it's done. If it's still runny, return the pot to heat and continue cooking for another 5-10 minutes, then repeat the test.
5.Once the jam is done, remove it from heat and let it cool for 5-10 minutes. Spoon it into clean, sterilized jars and seal tightly. Store in a cool, dry place until ready to use.
