1 pie crust , thinly rolled
1 cup mushroom , sliced
2 tablespoons brandy or 2 tablespoons lemon juice
1 cup crab ( canned or cooked fresh )
1/4 cup swiss cheese or 1/4 cup cheddar cheese , grated
3 eggs
1 tablespoon flour
1/8 teaspoon nutmeg
1/2 teaspoon salt
1 cup cream

Instructions

1.Preheat the oven to 375°F (190°C)
2.Line pie crust in a 9-inch pie dish, and set aside
3.In a skillet over medium-high heat, sauté the sliced mushrooms until slightly browned.
4.Add the brandy or lemon juice and cook until almost all of the liquid has evaporated.
5.Add the crab and continue cooking for another 2-3 minutes.
6.Spoon the crab and mushroom mixture on the bottom of the pie crust.
7.Sprinkle the grated cheese on top.
8.In a separate bowl, beat the eggs and add in flour, nutmeg, salt, and slowly add in the cream.
9.Pour the egg mixture on top of the cheese and crab mixture.
10.Bake in the preheated oven for 40-45 minutes until the center is set and the top is golden brown.
11.Allow the quiche to cool for a few minutes before slicing and serving.
